While visiting Spokane, WA on a recent business trip I found myself settling in at the bar of the Post Street Ale House, wondering what’s good. The restaurant itself was very busy for a weeknight and the beer selection was as impressive as the food menu. I quickly selected a cask-style IPA (Ninkasi, very good) and zeroed in on the food menu, full of comfort food classics. I asked the bartender what was good and she said “the Reuben”. I thought to myself “what would Bill do in this situation?” and immediately ordered the Reuben. It was great! Not too messy and relatively thick-cut pastrami on this one, on a colorful marble rye. And the fries were delicious too. All in all, the Post Street Ale House is a terrific place to eat, drink or hang out if you find yourself in Spokane, WA.

For me, one of the great things about cooking is that moment of clarity when I am pondering what to cook for a meal. There are times when I am not feeling the need for one of my proven true recipes. I am looking for something different, yet not wanting to experiment too much beyond what I know how to cook. This is when I start mixing and matching the different recipes and techniques that I know. The result is usually a pairing of components from two different recipes with the results ranging from spectacular to tragic failures.

The other night was one of those scenarios. I was wanting to practice my new found knowledge of lightly frying breaded fish filets in a skillet, but I was at a loss as to what type of sauce or topping should accompany the fish filet? I was not feeling the need for a cream, butter or tomato based sauce, but wanted more then just the fish itself. That is when I thought of the Warm Artichoke, Shallot and Caper Salad that I had made the previous night with Sea Scallops and Vermouth.

The result was definitely a positive experience. The fresh fried fish topped with the warm salad was surprisingly light, full of flavor and did not leave you feeling like you ate a gut bomb. For this dish I added fresh sliced avocados to keep the meal minimally prepared. Overall, this was one of those experiments that will require little in the way of tweaking to perfect the overall experience.

Aside from posting a creation from the kitchen the lesson here is that there are no fast and hard rules of cooking. Yes, the potential for failure is ever present, but the potential for creating a new dish to expand the list of go to meals in your kitchen is far more important then any failures you might experience.

Curious sweetness

Have you noticed that after eating fresh artichokes, that everything you eat or drink afterwards tastes sweeter? The reason is due to a molecule called ‘Cynarin‘ which inhibits your bitter taste receptors.Hence the reason why it is best to pair artichokes with bland food such as pasta, or that you shouldn’t eat artichokes before tasting wine. However the sweetness effect of ‘Cynarin’ isn’t nearly as pronounced as ‘miraculin‘ which comes from miracle fruit (Synsepalum dulcificum).

Spinach, Jalapeno and Artichoke dip

Who would have thought that such a strange looking plant would hide such tasty morsels inside. Artichokes are one of those foods, like cows milk that make you wonder how anyone ever thought about eating them. As well as the inedible hairy choke, and the spiky outer leaves, it isn’t until you cook an artichoke that you begin to appreciate its subtle flavour. This amazing dip calls only for the tender hearts of the artichoke, which seems like such a waste, but the hearts are readily available in tins by themselves.

There are basically 3 ways to eat this Artichoke dip. Eat it raw, cook it and have it hot, or cook it and let it cool before eating. Any way is good, and it will taste slightly different because of the melding of the ingredients while cooking.

Ingredients

  • 0.5 lbs (225g) of sour cream
  • 1 cup (240ml) mayonnaise
  • 1 heaped cup (240ml) of freshly grated Parmesan cheese
  • 2 crushed garlic cloves
  • 0.5 tsp salt
  • Freshly ground black pepper
  • 2 tbsp jalapeño, chopped
  • 1 tin 15oz (425g) artichoke hearts, drained and roughly chopped
  • 1lb (450g) box of frozen spinach, drained well

Method
Mix together the sour cream, mayonnaise and Parmesan cheese. Add the garlic, jalapeño (omit if you don’t want it spicy), artichoke hearts and spinach, mix to combine and season well. You can chill and serve as it is, or turn it out into an oven proof dish and bake at 375F (190C) for approx. 25mins. Serve hot or cold with bread, pita chips or crackers. Optionally you could add mozzarella for a ‘gooey-er’ dip.
