Bill Retherford

Neither a trained chef or culinary expert but a true lover of food including the history, background and even the science behind what makes a great dish. With twelve years as a manufacturing consultant specializing in food processing, I have a unique perspective on how much of the food we purchase is created. Being fortunate to have travel extensively for work and pleasure provides me with ample opportunities to experience new foods and regional variations on a regular basis. I have an obsession for Reubens and will select a reuben sandwich without consideration of anything else on the menu if available.

Southeast By Southwest…Fiesta Style Cheesy Grits

Quick Grits with Salsa and Pepper Jack Cheese

I did not grow up eating grits and the first time I did try grits was also the first visit to a Cracker Barrel. I cannot say that I was overly impressed, but I also did not have any problem finishing the grits that time or any time since then. Over the past few years …

While visiting San Diego, CA we spent a morning walking around Balboa Park, adjacent to the San Diego Zoo. Both attractions are must visits when in San Diego. The time was approaching lunch and after enjoying the attractions at the park, we were to head an hour north to the Temecula Valley to spend the …

Quick & Easy Pasta Sauce (Dalla Ricetta Della Famiglia Fiorito)

Dalla Ricetta Della Famiglia Fiorito

Of all of pasta sauces that I prepare in the kitchen, whether handed down through the family or “invented” through my own experimentation, there is one exception. That is the sauce taught to me by my college friend Marco Fiorito many years ago when he came through Houston. Marco was born and raised in Italy …
